Ingredients

  • 1 lb flank or sirloin steak
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup crumbled feta cheese (or vegan alternative)
  • ½ cup hummus

Instructions

  1. In a small bowl, whisk together olive oil, lemon juice, garlic, and oregano for the marinade.
  2. Place steak in a resealable bag and pour the marinade over it. Seal and refrigerate for at least 30 minutes (up to overnight).
  3. Preheat grill to medium-high heat (about 400°F). Remove steak from marinade and discard excess liquid. Grill for 4-6 minutes per side until desired doneness.
  4. Allow steak to rest before slicing thinly against the grain.
  5. In serving bowls, start with hummus as a base, then layer sliced steak, cherry tomatoes, cucumber, red onion, and feta cheese.
