Ingredients
- 1 lb flank or sirloin steak
- 2 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- 4 cloves garlic, minced
- 2 tsp dried oregano
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ½ cup crumbled feta cheese (or vegan alternative)
- ½ cup hummus
Instructions
- In a small bowl, whisk together olive oil, lemon juice, garlic, and oregano for the marinade.
- Place steak in a resealable bag and pour the marinade over it. Seal and refrigerate for at least 30 minutes (up to overnight).
- Preheat grill to medium-high heat (about 400°F). Remove steak from marinade and discard excess liquid. Grill for 4-6 minutes per side until desired doneness.
- Allow steak to rest before slicing thinly against the grain.
- In serving bowls, start with hummus as a base, then layer sliced steak, cherry tomatoes, cucumber, red onion, and feta cheese.
