  • 2 cups Oreo crumbs (about 24 Oreos, filling removed)
  • 4 tablespoons unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/3 cup brewed espresso
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix Oreo crumbs with melted butter and press into the bottom of a 9-inch springform pan. Bake for 10 minutes; cool.
  3. Reduce oven temperature to 325°F (160°C). Beat cream cheese until smooth; add sugar and vanilla. Gradually mix in espresso. Add eggs one at a time.
  4. Pour filling over the cooled crust and smooth the top. Bake in a water bath for 65–85 minutes until edges are set.
  5. Turn off oven and let the cheesecake cool slowly inside for one hour.
  6. For ganache, heat heavy cream then pour over chocolate chips; stir until smooth. Cool slightly before pouring over cheesecake.
  7. Refrigerate for at least four hours or overnight before serving.
