Ingredients
- 8 oz dry pasta
- 4 cups corn kernels (fresh or frozen)
- ½ cup crumbled cotija cheese
- ½ red onion, diced
- ½ cup chopped cilantro
- 1 jalapeno pepper, chopped
- 1 cup plain Greek yogurt
- 2 Tbsp mayonnaise
- 1 lime, zest and juice
- ½ tsp chili powder
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp kosher salt
- ¼ tsp black pepper
Instructions
- Cook the pasta according to package instructions until al dente; drain and cool.
- If using fresh corn, roast or cook until tender; remove kernels.
- In a bowl, mix Greek yogurt with mayo, lime juice/zest, and spices to make the dressing.
- In a large bowl, combine cooled pasta, corn, red onion, cilantro, jalapeno, and cheese.
- Pour the dressing over and toss gently until well combined.
