Ingredients

  • 8 oz dry pasta
  • 4 cups corn kernels (fresh or frozen)
  • ½ cup cotija cheese (or feta/parmesan)
  • ½ red onion, diced
  • ½ cup fresh cilantro, chopped
  • 1 jalapeno pepper, chopped
  • For the dressing: Greek yogurt, olive oil mayonnaise, lime zest and juice, chili powder, smoked paprika, garlic powder

Instructions

  1. Cook the pasta according to package directions; drain and toss with olive oil.
  2. Roast fresh corn or heat frozen corn in a skillet until warmed through.
  3. In a bowl, mix Greek yogurt with olive oil mayonnaise, lime zest and juice, and spices.
  4. In a large bowl, combine pasta, corn, cilantro, onion, cheese, jalapeno; add dressing and toss to coat.
  5. Chill before serving for best flavor.
