- 2 ⅔ cups cubed pumpkin
- ⅔ cup cubed starchy potato
- ½ tsp salt
- ¾ cup flour
- 2 tbsp vegan butter
- 2 tsp packed sage

- Boil water in a large pot and cook cubed pumpkin and potatoes until tender (about 15 minutes). Drain and let cool slightly before mashing.
- In a mixing bowl, combine the mashed pumpkin, mashed potato, salt, and flour to form a soft dough.
- On a floured surface, roll sections of dough into ropes about ½ inch thick and cut them into small pieces. Use a fork to create grooves on each piece.
- Boil salted water in another pot and drop the gnocchi in; cook until they float (about 2-3 minutes). Remove with a slotted spoon.
