  • 45 ears of corn (or two 12 oz bags of frozen corn)
  • 1 clove garlic (minced)
  • Medium green bell pepper (chopped)
  • 1/2 cup chopped red onion
  • 2 tomatoes (seeded and diced)
  • 1 cup canned black beans (drained and rinsed)
  • 1/2 cup Litehouse Sweet Onion Dressing
  • Juice of 1 lime
  • 1/2 cup crumbled feta or cotija cheese

Instructions

  1. Prepare the dressing by mixing Litehouse Sweet Onion Dressing, cumin, cayenne, and lime juice in a small bowl.
  2. Heat oil in a large sauté pan over medium heat. Add corn and minced garlic; sauté for about 10 minutes until slightly charred.
  3. Stir in chili powder, salt, and pepper; cook for another minute.
  4. In a large bowl, combine the sautéed corn mixture with black beans, bell pepper, red onion, tomatoes, and cilantro.
  5. Drizzle dressing over the salad and toss well. Top with crumbled cheese before serving.
