Ingredients
- 18 to 20 jumbo pasta shells
- 2 cups ricotta cheese
- 5 ounces fresh spinach
- 1/4 cup grated pecorino cheese
- 2 cloves garlic (grated)
- 3/4 teaspoon sea salt
- 2 cups marinara sauce
- Fresh parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Cook jumbo pasta shells in salted boiling water until al dente; drain.
- In a mixing bowl, combine ricotta, pecorino, spinach, garlic, seasoning, and mix well.
- Fill each shell with the ricotta mixture.
- Spread half of the marinara sauce in a baking dish and place filled shells on top. Drizzle with olive oil and cover with remaining sauce.
- Cover with foil and bake for 20 minutes. Remove foil and sprinkle with extra pecorino; bake uncovered for another 10 minutes until golden brown.
- Garnish with fresh parsley and serve hot.
