  • 1/2 cup chopped yellow onion
  • 1 poblano pepper, chopped
  • 2 cups shredded chicken
  • 1 can (15 oz) black beans (drained)
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup frozen corn
  • Seasoning blend or 1 tbsp chicken taco/chicken fajita seasoning
  • 2 tsp fresh lime juice
  • finely chopped cilantro for garnish
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp chili powder
  • 1/2 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1/4 tsp cumin

Instructions

  1. In a large saucepan or Dutch oven, melt the butter over medium heat. Add onions and poblano pepper with half the seasoning blend; cook until tender.
  2. Stir in shredded chicken, black beans, corn, chicken broth, and remaining seasoning blend. Bring to a simmer; cook uncovered for 15 minutes.
  3. Add heavy cream and cheese; stir until melted and smooth.
  4. Simmer for an additional 15 minutes; stir in lime juice and season with salt and pepper.
  5. Serve hot topped with cilantro and your favorite garnishes.
