  • 2 cups whole milk
  • 1 ½ cups dulce de leche
  • 6 egg yolks
  • ½ cup sugar (optional)
  • ½ teaspoon vanilla extract

Instructions

  1. In a medium saucepan over medium heat, warm the heavy cream, whole milk, and 1 cup of dulce de leche until steaming.
  2. In a large mixing bowl, whisk together egg yolks, sugar (if using), vanilla extract, and kosher salt.
  3. Gradually add the hot cream mixture to the egg yolk mixture while whisking constantly.
  4. Return the combined mixture to the saucepan and cook over medium-low heat until thickened to a custard consistency (about 6-10 minutes).
  5. Strain through a fine-mesh sieve into a bowl set in ice water to cool quickly; refrigerate until chilled (at least 1 hour).
  6. Churn in an ice cream maker according to instructions; add remaining dulce de leche near the end of churning.
  7. Transfer to a container and freeze until firm (3-4 hours).
