Ingredients
- 4 pieces uncooked Turkey Bacon, diced
- 1 small white onion, finely diced
- 1 jalapeno, diced (more for extra heat)
- 4 garlic cloves, minced
- 12 oz dark Mexican beer
- 4 cans pinto beans, rinsed and drained
- 1 tablespoon brown sugar
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1 tablespoon fresh lime juice
- 1/4 cup chopped fresh cilantro
Instructions
- In a large sauté pan over medium-high heat, cook the Turkey Bacon until crispy. Remove and set aside.
- In the same pan, sauté onion and jalapeno in reserved Turkey bacon grease until soft. Add garlic and sauté briefly.
- Stir in beer, pinto beans, brown sugar, oregano, chili powder, salt, and cumin. Bring to a simmer; reduce heat to medium-low and cook uncovered for about 15 minutes.
- Stir in cooked Turkey Bacon and lime juice before serving hot topped with fresh cilantro.
