  • 4 pieces uncooked Turkey Bacon, diced
  • 1 small white onion, finely diced
  • 1 jalapeno, diced (more for extra heat)
  • 4 garlic cloves, minced
  • 12 oz dark Mexican beer
  • 4 cans pinto beans, rinsed and drained
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1 tablespoon fresh lime juice
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large sauté pan over medium-high heat, cook the Turkey Bacon until crispy. Remove and set aside.
  2. In the same pan, sauté onion and jalapeno in reserved Turkey bacon grease until soft. Add garlic and sauté briefly.
  3. Stir in beer, pinto beans, brown sugar, oregano, chili powder, salt, and cumin. Bring to a simmer; reduce heat to medium-low and cook uncovered for about 15 minutes.
  4. Stir in cooked Turkey Bacon and lime juice before serving hot topped with fresh cilantro.
