  • 1 cup fresh raspberries
  • 1 cup heavy cream
  • ½ cup granulated sugar (to taste)
  • 1 tablespoon unflavored Vegan Gelatin powder
  • 1 teaspoon vanilla extract

Instructions

  1. Rinse fresh raspberries under cold water and drain. Set aside half for garnish.
  2. Blend remaining raspberries with sugar until smooth, then strain to remove seeds.
  3. Sprinkle vegan gelatin over two tablespoons of cold water; allow to bloom for five minutes before gently heating until dissolved.
  4. Stir dissolved gelatin into raspberry puree along with vanilla extract.
  5. Whip heavy cream to soft peaks in another bowl. Fold half into the raspberry mixture, then gently fold in the rest until combined.
