  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, sliced
  • 1 cup cooked turkey or chicken, diced
  • 1/4 cup red onion, thinly sliced
  • 1 cup crispy croutons
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and dry the romaine lettuce thoroughly. Tear into bite-sized pieces and place in a large bowl.
  2. Halve the cherry tomatoes and add them to the bowl.
  3. Slice the avocado in half, remove the pit, scoop out the flesh, slice thinly, and add to the salad.
  4. Dice the cooked turkey or chicken into bite-sized pieces and sprinkle over the salad.
  5. Add sliced red onion and crispy croutons for enhanced texture.
  6. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until well combined. Drizzle over the salad just before serving.
