Instructions
- 1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- 2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- 3. In another bowl, mix the melted butter and coconut milk until combined; stir in the coconut flakes.
- 4. Gradually add wet ingredients to dry ingredients and mix gently until just combined.
- 5. Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
- 6. While cooling, whip the chilled coconut cream with agar-agar until smooth and fluffy.
- 7. Once cooled, fill each cupcake with the cream filling using a piping bag or spoon.
