  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ cup unsalted butter (melted)
  • ¾ cup full-fat coconut milk
  • 1 cup coconut flakes (sweetened or unsweetened)
  • 1 cup chilled coconut cream
  • 1 tbsp agar-agar powder

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. 2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. 3. In another bowl, mix the melted butter and coconut milk until combined; stir in the coconut flakes.
  4. 4. Gradually add wet ingredients to dry ingredients and mix gently until just combined.
  5. 5. Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. 6. While cooling, whip the chilled coconut cream with agar-agar until smooth and fluffy.
  7. 7. Once cooled, fill each cupcake with the cream filling using a piping bag or spoon.
