  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot; add 1 cup of orzo and a pinch of salt. Cook for 8-10 minutes until al dente. Drain and rinse with cold water.
  2. In a bowl, combine the halved cherry tomatoes, minced garlic, and chopped basil.
  3. In a small bowl, mix 3 tablespoons of olive oil with 2 tablespoons of balsamic vinegar; season with salt and pepper.
  4. Add cooked orzo to the bowl with veggies; pour dressing over everything and gently mix.
  5. Cover the salad and refrigerate for at least 30 minutes to enhance flavor.
