- 3 ½ cups peeled fresh ginger
- 4 cups water
- 5 cups white sugar
- 1 (3 oz) pouch liquid pectin
- 5 half pint canning jars with lids and rings
Instructions
- 1. Cut ginger in half; cube one half and shred the other. Simmer with water for 1 hour and 15 minutes, then drain, reserving ½ cup of liquid.
- 2. Chill the cooked ginger in the fridge for at least 4 hours.
- 3. In a large pot, combine chilled ginger, reserved water, and sugar. Boil for 1 minute.
- 4. Add liquid pectin and simmer for an additional 7 minutes, skimming foam as needed.
- 5. Sterilize jars by boiling them in water before filling with marmalade, leaving ¼ inch of space at the top.
- 6. Process filled jars in a water bath for 15 minutes before cooling completely.
