- 1 medium onion
- 1 medium jalapeño pepper
- 1 medium bell pepper (red or green)
- 2 tbsp olive oil
- 3.5 cups vegetable broth
- 3/4 cup dried red lentils
- 15 ounces tomato sauce
- 3/4 cup salsa
- 1 cup corn (fresh, canned, or frozen)
- 15 ounces black beans
- 15 ounces red beans
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- 1/2 cup light cream cheese
Instructions
- Chop the onion, bell peppers, and slice the jalapeño.
- In the slow cooker, heat olive oil on high; sauté onions and peppers until softened.
- Add remaining ingredients: vegetable broth, corn, lentils, tomato sauce, salsa, beans, spices, and cream cheese.
