  • 1 medium jalapeño pepper
  • 1 medium bell pepper (red or green)
  • 2 tbsp olive oil
  • 3.5 cups vegetable broth
  • 3/4 cup dried red lentils
  • 15 ounces tomato sauce
  • 3/4 cup salsa
  • 1 cup corn (fresh, canned, or frozen)
  • 15 ounces black beans
  • 15 ounces red beans
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1/2 cup light cream cheese

Instructions

  1. Chop the onion, bell peppers, and slice the jalapeño.
  2. In the slow cooker, heat olive oil on high; sauté onions and peppers until softened.
  3. Add remaining ingredients: vegetable broth, corn, lentils, tomato sauce, salsa, beans, spices, and cream cheese.
  4. Cook on low for about 8 hours or high for about 4 hours until lentils are tender.
  5. Stir well before serving and top with your choice of garnishes.
