  • 24 oz tiny red potatoes (or Yukon Gold)
  • 16 oz baby carrots
  • 21.5 oz cream of chicken soup
  • 1/2 cup chicken stock
  • 1 oz Ranch seasoning mix

Instructions

  1. Season the chicken with salt, pepper, and a tablespoon of Ranch dressing mix.
  2. Place washed baby potatoes and carrots in the slow cooker.
  3. Layer seasoned chicken on top of vegetables.
  4. In a mixing bowl, blend cream of chicken soup, chicken stock, chiles (optional), and remaining Ranch mix until smooth.
  5. Pour sauce over chicken and vegetables.
  6. Cover and cook on low for 8 hours or high for 4 hours until done.
  7. Shred or chunk the chicken before serving.
