- 1 tablespoon coconut oil
- 1 large yellow onion (finely diced)
- 1 tablespoon ginger paste
- 1 tablespoon minced garlic
- 2–1/4 teaspoons garam masala
- 1 can diced tomatoes
- 2 pounds boneless skinless chicken thighs
- 8 tablespoons unsalted butter
- 1/2 cup heavy cream
Instructions
- In a nonstick pan, heat coconut oil over medium-high heat. Sauté the onion, garlic, and ginger until golden brown (3–6 minutes). Stir in spices for an additional 1–3 minutes.
- Add diced tomatoes and scrape the pan bottom. Transfer to the slow cooker.
- Place chicken thighs in the cooker and coat well with the sauce. Cover and cook on high for 2-1/2–4 hours or low for 4–6 hours until chicken is cooked through.
- Remove chicken, chop into bite-sized pieces, then purée the sauce using an immersion blender until smooth.
- Return sauce to the slow cooker, stirring in butter and cream until combined. Add chopped chicken back in before serving.
