Description

Indulge in the comforting flavors of Crock Pot Swamp Potatoes with Sausage & Veggies. This easy one-pot meal combines tender potatoes, fresh green beans, and smoky sausage, all seasoned with zesty Cajun spices.


Ingredients

  • 1.52 lbs fresh green beans (trimmed and cut)
  • 1.5 lbs small potatoes (halved)
  • 1 large onion (diced)
  • 1 lb smoked sausage (sliced)
  • 1 stick butter
  • 1 tablespoon Cajun seasoning
  • ½ teaspoon pepper

Instructions

  1. Layer halved potatoes in the crock pot; sprinkle with pepper and half the Cajun seasoning.
  2. Place the stick of butter on top of the potatoes.
  3. Add green beans and diced onion; sprinkle with remaining Cajun seasoning.
  4. Top with sliced smoked sausage.
  5. Cover and cook on HIGH for 4 hours or LOW for 6 hours; stir gently once an hour.
  6. Before serving, taste and adjust seasonings if needed.
