- 1.5–2 lbs fresh green beans (trimmed and cut)
- 1.5 lbs small potatoes (halved)
- 1 large onion (diced)
- 1 lb smoked sausage (sliced)
- 1 stick butter
- 1 tablespoon Cajun seasoning
- ½ teaspoon pepper
Instructions
- Layer halved potatoes in the crock pot; sprinkle with pepper and half the Cajun seasoning.
- Place the stick of butter on top of the potatoes.
- Add green beans and diced onion; sprinkle with remaining Cajun seasoning.
- Top with sliced smoked sausage.
- Cover and cook on HIGH for 4 hours or LOW for 6 hours; stir gently once an hour.
- Before serving, taste and adjust seasonings if needed.
