Ingredients

  • 3 lb chuck roast (trimmed)
  • 2 tbsp steak seasoning
  • 1 tbsp dried thyme
  • 1 cup beef broth
  • Optional: 2 lbs potatoes, 1 lb carrots, 1 yellow onion

Instructions

  1. Season the roast with oil, steak seasoning, and thyme on both sides.
  2. Sear in a hot skillet for 2-3 minutes per side until browned, then transfer to the slow cooker.

  6. Check tenderness; if needed, thicken gravy with cornstarch dissolved in water.
