  • 4 boneless, skinless chicken breasts
  • 1 cup coarse pretzel crumbs
  • 2 tbsp Dijon mustard
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 1 cup low-sodium vegetable broth
  • 1 tsp pectin or agar-agar

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper.
  3. In one bowl, mix pretzel crumbs and garlic powder. In another, combine olive oil and mustard.
  4. Dip each chicken breast in the mustard mixture, then coat with pretzel crumbs.
  5. Place coated chicken in the baking dish and bake for 25-30 minutes until golden brown (internal temperature of 165°F).
  6. For the sauce, heat vegetable broth and pectin/agar-agar in a saucepan; gradually stir in cheddar until smooth.
  7. Serve chicken drizzled with mustard-cheddar sauce alongside veggies or fries.
