Ingredients
- 2 large sweet potatoes (peeled and thinly sliced)
- 3 tablespoons unsalted butter (melted)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon fresh thyme leaves
- ¾ teaspoon salt
- ½ teaspoon black pepper
- ½ cup freshly grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a muffin tin.
- In a mixing bowl, combine the sweet potato slices with melted butter, olive oil, garlic powder, thyme leaves, salt, and pepper. Toss until evenly coated.
- Layer 5–6 slices of sweet potato into each muffin cup, slightly overlapping them. Sprinkle some Parmesan on top of each stack.
- Bake for 30–35 minutes until tender and golden brown. Add remaining Parmesan during the last 5 minutes of baking.
- Cool for about 5 minutes before gently removing from the tin. Garnish with extra thyme before serving warm.
