  • 2 large sweet potatoes (peeled and thinly sliced)
  • 3 tablespoons unsalted butter (melted)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme leaves
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a muffin tin.
  2. In a mixing bowl, combine the sweet potato slices with melted butter, olive oil, garlic powder, thyme leaves, salt, and pepper. Toss until evenly coated.
  3. Layer 5–6 slices of sweet potato into each muffin cup, slightly overlapping them. Sprinkle some Parmesan on top of each stack.
  4. Bake for 30–35 minutes until tender and golden brown. Add remaining Parmesan during the last 5 minutes of baking.
  5. Cool for about 5 minutes before gently removing from the tin. Garnish with extra thyme before serving warm.
