  • 1 1/2 tbsp granulated sugar
  • 1/8 tsp salt
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 3/4 cup whole milk
  • 1/2 cup water
  • 3 tbsp unsalted butter
  • 1/2 cup castor sugar (for sauce)
  • 1/2 cup unsalted butter (for sauce)
  • Thinly sliced orange peel
  • 3/4 cup orange juice
  • 1/3 cup orange liqueur

Instructions

  1. In a mixing bowl, whisk together flour, sugar, and salt. Add eggs and mix until smooth. Gradually whisk in milk and water until lump-free. Stir in melted butter and let rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and grease lightly with butter. Pour a ladle of batter into the pan, swirling to coat evenly. Cook until edges lift; flip and cook for another 30 seconds.
  3. For the sauce, melt castor sugar with unsalted butter in a saucepan until golden brown. Stir in orange peel and juice; simmer for about 5 minutes before carefully adding orange liqueur.
  4. Fold crepes into quarters and coat them in the sauce.
  5. For an exciting finish, flambé the crepes by igniting the sauce carefully before serving.
