  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 45 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 6 cups low-sodium chicken broth
  • 8 oz cream cheese, cubed
  • 1 cup freshly grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • Fresh basil leaves for garnish

Instructions

  1. Dice the onion, mince the garlic, and slice the carrots and celery.
  2. In a large pot over medium heat, add olive oil and cook chicken until golden brown (about 5 minutes per side). Remove and set aside.
  3. In the same pot, sauté onion, garlic, carrots, and celery for about 5 minutes until softened.
  4. Pour in chicken broth and bring to a simmer. Add cream cheese and stir until melted.
  5. Shred cooked chicken using two forks and return it to the pot with Italian seasoning.
  6. Serve hot in bowls topped with Parmesan cheese and fresh basil.
