- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 4–5 cloves fresh garlic, minced
- 1 medium onion, diced
- 2 medium carrots, sliced
- 2 stalks celery, chopped
- 6 cups low-sodium chicken broth
- 8 oz cream cheese, cubed
- 1 cup freshly grated Parmesan cheese
- 1 tbsp Italian seasoning
- Fresh basil leaves for garnish
Instructions

- Shred cooked chicken using two forks and return it to the pot with Italian seasoning.
