  • 1 large sweet onion (chopped)
  • 34 cloves garlic (minced)
  • 1 ½ pounds boneless chicken breast
  • 30 ounces canned cannellini beans (drained)
  • 7 ounces chopped green chiles (mild or hot)
  • 1 cup frozen corn
  • 4 cups chicken broth
  • 8 ounces cream cheese (cubed)

Instructions

  1. Gather and prep all ingredients: chop onions, mince garlic, cube cream cheese, and drain beans.
  2. In a large pot over medium heat, melt butter. Sauté onions until translucent; add garlic, cumin, and oregano.
  3. Add chicken breasts to the pot; season with salt and pepper. Pour in chicken broth and bring to a boil.
  4. Reduce heat; stir in drained beans, chiles, and corn. Cover and simmer for 25 minutes.
  5. Remove chicken; shred it and return it to the pot.
