  • 1 jar (8 oz) oil-packed sun-dried tomatoes
  • 1 lb spicy Italian chicken sausage
  • 1 yellow onion, chopped
  • 2 shallots, chopped
  • 6 cloves garlic, minced
  • 1 cup carrots, chopped
  • 1/2 cup celery, chopped
  • 2 tbsp Italian seasoning
  • 6 cups broth (chicken or vegetable)
  • 2 cans white beans, drained and rinsed
  • Salt and black pepper to taste
  • 2 cups baby spinach
  • 1 cup whole milk or cream
  • Zest and juice of 1 lemon
  • Fresh parsley for garnish

Instructions

  1. In a Dutch oven, heat the oil from the sun-dried tomato jar over medium-high heat. Add the sausage and onion; cook until browned.
  2. Stir in shallots, garlic, carrots, celery, Italian seasoning, salt, and pepper. Cook for another 5 minutes until fragrant.
  3. Pour in the broth and simmer for about 10 minutes until vegetables are tender.
  4. Add spinach, sun-dried tomatoes, white beans, cream, lemon zest, and juice. Cook for a few more minutes until heated through.
  5. Serve hot in bowls topped with extra parmesan cheese and fresh parsley.
