  • 8 oz penne pasta
  • 2 cups broccoli florets
  • 1 lb boneless skinless chicken breast
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes (drained and chopped)
  • Olive oil, salt, pepper, Italian seasoning, smoked paprika

Instructions

  1. Boil salted water in a large pot. Cook penne pasta until al dente; add broccoli in the last 2 minutes. Drain and set aside.
  2. Season chicken slices and sear in olive oil over medium heat until golden brown. Remove from skillet.
  3. In the same skillet, melt butter and sauté garlic and sun-dried tomatoes. Stir in heavy cream and chicken broth; add cheeses and spices to create the sauce. Simmer until thickened.
  4. Combine pasta, broccoli, and chicken with the sauce in the skillet; toss to coat well.
