Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 8 oz cream cheese, softened
  • 1 cup whole milk
  • 2 tsp dried Italian herbs (oregano and basil mix)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. In a large skillet over medium-high heat, add olive oil. Season chicken with salt and pepper; sear until golden brown on both sides (about 5 minutes per side). Transfer chicken to a plate.
  3. In the same skillet, sauté onions and garlic until translucent (about 3 minutes).
  4. Add cream cheese and milk to the skillet; stir until smooth. Pour in chicken broth and dried herbs; stir continuously for about 2 minutes.
  5. Return seared chicken to the skillet with sauce; add uncooked rice ensuring it is evenly distributed.
  6. Cover and reduce heat to low; simmer for about 25 minutes until rice is tender.
