- 2 cups low-sodium chicken broth
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 8 oz cream cheese, softened
- 1 cup whole milk
- 2 tsp dried Italian herbs (oregano and basil mix)
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Prepare your ingredients by chopping the onion and mincing the garlic.
- In a large skillet over medium-high heat, add olive oil. Season chicken with salt and pepper; sear until golden brown on both sides (about 5 minutes per side). Transfer chicken to a plate.
- In the same skillet, sauté onions and garlic until translucent (about 3 minutes).
- Add cream cheese and milk to the skillet; stir until smooth. Pour in chicken broth and dried herbs; stir continuously for about 2 minutes.
- Return seared chicken to the skillet with sauce; add uncooked rice ensuring it is evenly distributed.
- Cover and reduce heat to low; simmer for about 25 minutes until rice is tender.
