- 3 medium mangos (for puree)
- 8 oz cream cheese (softened)
- 1 cup white chocolate chips (melted)
- 2 cups heavy cream (chilled)
- 1 cup confectioner’s sugar
Instructions
- Preheat your oven to 350°F (177°C). Line two or three 8-inch cake pans with parchment paper.
- In a stand mixer, whisk together eggs, sugar, and vanilla until fluffy.
- Sift flour and baking powder; fold gently into egg mixture.
- Divide batter between prepared pans and bake for 22-25 minutes until golden brown. Cool on wire racks.
- Blend chopped mangos until smooth for the puree; set aside.
- In a bowl, mix cream cheese and melted white chocolate until smooth, then add remaining mango puree.
- Whip chilled heavy cream with confectioner’s sugar until stiff peaks form; fold into the mango mixture gently.
- Assemble cake layers by spreading puree and frosting between each layer and covering the top and sides with remaining frosting.
