  • 2 tbsp olive oil
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1/3 cup fresh lemon juice (about 2 lemons)
  • 1 cup low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Pat the chicken breasts dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for about 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, lower the heat and sauté minced garlic until fragrant (about 30 seconds).
  4. Add heavy cream, lemon juice, chicken broth, and thyme; whisk until smooth and simmer for a few minutes until slightly thickened.
  5. Return the chicken to the skillet and cook for an additional 5 minutes to absorb flavors.
