  • 1 pound ground chicken
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cups fresh spinach, chopped
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground chicken; cook until browned (5–7 minutes).
  3. Remove chicken, sauté onions in the same pot for 3–4 minutes.
  4. Add garlic; sauté for another 1–2 minutes.
  5. Return chicken to pot; stir in chicken broth and bring to a simmer.
  6. Add heavy cream and whole milk; mix well.
  7. Season with basil, oregano, salt, pepper, and red pepper flakes (if using).
  8. Simmer for 10–15 minutes.
  9. Stir in cheeses until melted.
  10. Add spinach, carrot, and celery; cook for another 5–7 minutes until tender.
  11. Adjust seasoning if needed and serve hot.
