  • 1 chicken breast
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard
  • 68 asparagus spears
  • 1 cup baby potatoes, halved
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Toss halved baby potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
  2. Season the chicken breast with salt and pepper. In a skillet over medium-high heat, sear for about 4-5 minutes per side until cooked through. Remove from the pan.
  3. In the same skillet, add chicken broth, Dijon mustard, heavy cream, and herbs; simmer for 3-5 minutes until thickened. Return the chicken to coat in the sauce.
  4. Sauté asparagus in olive oil over medium heat for about 4-5 minutes until just tender.
  5. Serve the sautéed asparagus beside the chicken topped with creamy sauce and crispy roasted potatoes on the side.
