  • 4 carrots, sliced
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 8 cups low-sodium chicken broth
  • 1 cup uncooked wild rice
  • ¼ cup flour (gluten-free optional)
  • ½ cup half-and-half
  • ½ cup whole milk
  • Italian seasoning, thyme, parsley, salt, and pepper

Instructions

  1. Prepare the ingredients by dicing the onion, chopping carrots and celery, and mincing garlic.
  2. Layer chicken at the bottom of a slow cooker. Add garlic and seasonings on top.
  3. Add onions, carrots, celery, broth, and rinsed wild rice.
  4. Cook on low for 6-8 hours until rice is soft.
  5. Shred cooked chicken and return to soup.
  6. Whisk flour with half-and-half and milk; stir into soup until creamy.
