  • 9 oz cheese tortellini (fresh or refrigerated)
  • 1 cup heavy cream
  • 4 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons unsalted butter
  • 1 tablespoon garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the tortellini according to package instructions; reserve ½ cup pasta water and drain.
  2. Season the chicken with Cajun seasoning, salt, and pepper.
  3. Sear the chicken in olive oil over medium-high heat for 4-5 minutes on each side until golden brown. Remove and set aside.
  4. In the same skillet, sauté minced garlic in butter, then add heavy cream and Velveeta until melted. Stir in mozzarella until smooth.
  5. Toss cooked tortellini in the sauce; adjust thickness with reserved pasta water as needed.
  6. Return chicken to skillet, simmer for about 12 minutes, then serve garnished with fresh parsley.
