This delightful coleslaw features crunchy green cabbage, tossed in a creamy dressing that enhances its flavors, making it a fantastic addition to any meal.

Ingredients

Scale
  • 1 medium head of green cabbage (about 6 cups), finely shredded
  • 2 medium apples (Honeycrisp or Fuji), cored and diced
  • 1 cup dried cranberries
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup chopped fresh parsley
  • 1/2 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon celery seeds
  • Salt and black pepper to taste

Instructions

  1. Thinly slice the cabbage using a sharp knife or mandoline. Place it in a large mixing bowl.
  2. Core and dice the apples into small pieces; add them to the bowl with cabbage.
  3. Add the dried cranberries and chopped nuts (if using).
  4. Finely chop the parsley and mix it into the bowl.

  8. Refrigerate for at least 30 minutes before serving to let flavors meld.
