Description

Cajun Potato Soup is a soul-warming delight that combines creamy potatoes, vibrant vegetables, and zesty Cajun spices into one comforting bowl. Perfect for chilly evenings or cozy gatherings, this easy-to-make soup is packed with flavor and can be tailored to suit your personal taste.

Ingredients

Scale
  • 4 medium Yukon Gold potatoes, diced
  • 1 cup low-sodium chicken broth
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 green bell pepper, chopped
  • 2 tablespoons Cajun seasoning
  • 1 cup heavy cream (or coconut milk for a dairy-free option)
  • 2 tablespoons olive oil

Instructions

  1. Wash and dice the potatoes into bite-sized cubes.
  2. In a large pot over medium heat, add olive oil. Sauté onions, garlic, and bell pepper for about five minutes until fragrant.
  3. Add the diced potatoes and chicken broth to the pot. Bring to a gentle boil, then reduce heat and simmer until the potatoes are tender (about 15 minutes).
  4. Blend the soup using an immersion blender until smooth but retain some chunks for texture.
  5. Stir in Cajun seasoning and cream (or coconut milk). Simmer on low heat for an additional five minutes.
  6. Serve hot, garnished with fresh herbs if desired.
