Ingredients

  • 4 large potatoes, peeled and diced
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 2 cups kale, chopped
  • 1 cup green onions, sliced
  • Salt and black pepper to taste

Instructions

  1. In a large pot, cover the diced potatoes with water, add a pinch of salt, and bring to a boil. Cook until tender (15-20 minutes).
  2. Drain the potatoes and add the chopped kale and green onions to the pot. Stir in the butter and cook on low until the greens are wilted (about 5 minutes).
