Ingredients
- 12 oz Rotini Pasta (or alternative pasta)
- 6 slices Turkey Bacon
- 2 cups Cooked Chicken Breast
- 4 large Hard-Boiled Eggs
- 1 cup Cherry Tomatoes
- 1 medium Avocado
- 1/2 cup Crumbled Blue Cheese
- 1 cup Ranch Dressing
- Kosher Salt and Coarse Ground Black Pepper
Instructions
- Cook the rotini pasta in salted boiling water until al dente. Drain and rinse under cold water.
- Fry turkey bacon in a skillet until crispy; chop into bite-sized pieces.
- Hard-boil eggs in cold water; bring to a boil, cover, and let sit for 10-12 minutes. Cool in an ice bath before peeling and chopping.
- In a large mixing bowl, combine the cooled pasta, bacon, chicken, chopped eggs, cherry tomatoes, avocado, blue cheese, ranch dressing, salt, and pepper. Toss gently until well mixed.
