  • 56 firm apples (Golden Delicious or Braeburn)
  • 100 g unsalted butter
  • 120 g granulated sugar
  • 1 tsp vanilla extract (optional)
  • 1 pinch salt
  • 1 sheet puff pastry (store-bought or homemade)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Peel, core, and quarter the apples.
  3. In a cast iron skillet or Tarte Tatin pan, melt the butter over medium heat and add sugar. Cook until it turns golden caramel color; stir in vanilla extract and salt.
  4. Arrange the apple quarters tightly cut-side up in the caramel and cook over low heat for 10–15 minutes.
  5. Drape the puff pastry over the apples, tucking edges around the fruit.
  6. Bake for 30–35 minutes until golden brown.
  7. Allow to cool for 5–10 minutes before inverting onto a plate.
