  • 3 overripe mashed bananas
  • 4 tablespoons melted vegan butter
  • ¾ cup maple syrup
  • 1 cup almond or oat milk
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 cup rolled oats
  • 4 tablespoons melted vegan butter (for swirl)
  • ⅓ cup brown sugar
  • 2 tablespoons cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla.
  3. Combine dry ingredients (flour, oats, baking powder, baking soda, cinnamon, salt) in another bowl and stir into the wet mixture until just combined.
  4. Layer half the batter in the loaf pan and spread with half of the cinnamon swirl mixture (melted butter, brown sugar, cinnamon).
  5. Add remaining batter on top and finish with the rest of the swirl mixture.
  6. Bake for 50–60 minutes until a toothpick comes out clean.
  7. Cool before frosting with a mixture of powdered sugar, melted vegan butter, and softened cream cheese.
