  • 2 large handfuls baby spinach
  • 3 tablespoons milk (almond or regular)
  • 1 egg
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • ½ cup Greek yogurt
  • 3 tablespoons oil
  • 1 cup white whole wheat flour
  • 1 teaspoon baking soda
  • ⅔ cup cocoa powder
  • ¼ teaspoon sea salt
  • ½ cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F.
  2. In a high-powered blender, combine milk, bananas, and spinach until smooth. Transfer to a mixing bowl.
  3. Add the egg, sugar, vanilla, oil, and Greek yogurt to the banana-spinach mixture and stir until combined.
  4. In a separate bowl, mix flour, baking soda, salt, and cocoa powder. Gradually fold this dry mixture into the wet ingredients until just combined. Stir in dark chocolate chips.
  5. Line a muffin pan with liners and fill each about two-thirds full with batter. Sprinkle more chocolate chips on top if desired.
  6. Bake for 18–22 minutes or until a toothpick inserted comes out clean. Allow to cool before serving.
