  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 8 oz egg noodles (or your favorite pasta)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1 teaspoon dried Italian seasoning
  • Optional: ¼ cup grated Parmesan cheese and 2 tablespoons fresh parsley for garnish

Instructions

  1. Cook the egg noodles according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then add to the skillet. Cook for 5-7 minutes until golden brown; remove from skillet and set aside.
  3. In the same skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and Italian seasoning; cook for 1-2 minutes until fragrant.
  4. Add drained noodles and remaining tablespoon of butter to the skillet; toss to coat in the sauce. Return cooked chicken to the skillet, mixing well. Garnish with Parmesan cheese and parsley if desired before serving.
