  • 1 chicken breast (cut into strips)
  • 1 tsp olive oil
  • 1 cup chopped zucchini
  • 1 cup broccoli florets
  • 1 red bell pepper (sliced)
  • 1 cup chopped onion
  • 1 tbsp low-sodium soy sauce
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 cup cooked brown rice

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the chicken strips seasoned with salt and pepper. Cook for about 6-8 minutes until browned and cooked through. Set aside.
  2. In the same skillet, add zucchini, broccoli, bell pepper, and onion. Stir-fry for 5-7 minutes until tender-crisp.
  3. Return the chicken to the skillet, add soy sauce and garlic powder, mixing everything well until heated through.
  4. Warm the cooked brown rice separately using a microwave or stovetop.
  5. Serve by placing the stir-fried mixture next to the brown rice on a plate; garnish with optional chili flakes or sesame oil if desired.
