Chicken Stir-Fry with Steamed Broccoli & Fluffy Rice is a quick, nutritious meal that’s bursting with flavor. Perfect for busy weeknights or family dinners, this dish combines tender chicken breast, vibrant vegetables like carrots and bell peppers, and fluffy rice for a delightful balance of taste and nutrition.


Ingredients

  • 150g chicken breast, sliced
  • Red bell pepper, sliced
  • Carrot, thinly sliced
  • 1 cup uncooked white rice (basmati or jasmine)
  • 1 cup broccoli florets
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried herbs (or Italian seasoning)
  • Salt & pepper, to taste

Instructions

  1. Rinse the rice until the water runs clear. In a pot, combine rice, 1 cup water, and a pinch of salt. Bring to a boil then cover and simmer for 12-15 minutes until fluffy.
  2. Heat olive oil in a non-stick pan over medium-high heat. Cook chicken strips for 5-6 minutes until golden brown.
  3. Add sliced carrots and red bell pepper along with garlic powder, dried herbs, salt, and pepper. Stir-fry for another 3-4 minutes until vegetables are tender-crisp.
  4. Steam broccoli florets in a steamer basket over boiling water for about 4-5 minutes until bright green and tender.
  5. Serve the stir-fry alongside the fluffy rice and steamed broccoli.
