- 150g chicken breast, sliced
- Red bell pepper, sliced
- Carrot, thinly sliced
- 1 cup uncooked white rice (basmati or jasmine)
- 1 cup broccoli florets
- 1 tsp olive oil
- 1 tsp garlic powder
- 1 tsp dried herbs (or Italian seasoning)
- Salt & pepper, to taste
Instructions
- Rinse the rice until the water runs clear. In a pot, combine rice, 1 cup water, and a pinch of salt. Bring to a boil then cover and simmer for 12-15 minutes until fluffy.
- Heat olive oil in a non-stick pan over medium-high heat. Cook chicken strips for 5-6 minutes until golden brown.
- Add sliced carrots and red bell pepper along with garlic powder, dried herbs, salt, and pepper. Stir-fry for another 3-4 minutes until vegetables are tender-crisp.
- Steam broccoli florets in a steamer basket over boiling water for about 4-5 minutes until bright green and tender.
- Serve the stir-fry alongside the fluffy rice and steamed broccoli.
