  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Rinse the rice under cold water until it runs clear. In a pot, combine rinsed rice and water or chicken broth. Bring to a boil, cover, and reduce heat to low. Cook for 15-20 minutes until liquid is absorbed.
  2. While the rice cooks, season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest before slicing.
  3. In the same skillet, add minced garlic and sauté until fragrant. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted; season with salt and pepper.
  4. To serve, spoon cooked rice into bowls as a base, top with sliced chicken breast, drizzle with creamy garlic sauce, and garnish with chopped parsley.
