  • 2 cups cooked shredded chicken (preferably rotisserie)
  • 1 cup pastina pasta (or substitute with small pasta like stelline or ditalini)
  • 6 cups low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • 1 medium onion (finely diced)
  • 2 stalks celery (diced)
  • 2 medium carrots (diced)
  • 3 cloves garlic (minced)
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, celery, and carrots until softened, about 5-6 minutes. Add garlic and cook for an additional minute.
  2. Pour in chicken broth and add salt and pepper to taste. Bring to a simmer and let cook for 10 minutes.
  3. Add pastina pasta and cook according to package instructions, about 6-8 minutes. Stir in shredded chicken during the last minute of cooking.
  4. Remove from heat and stir in Parmesan cheese and chopped parsley right before serving.
