  • 2 tablespoons olive oil
  • 1 lb boneless skinless chicken breasts, diced
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup Marsala apple vinegar (or substitute with chicken broth)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; cook until golden brown (5–7 minutes). Remove and set aside.
  3. In the same skillet, sauté mushrooms until browned; add garlic and cook for an additional minute.
  4. Pour in chicken broth and Marsala vinegar, scraping the skillet's bottom. Stir in heavy cream and simmer until thickened.
  5. Mix in Parmesan cheese and thyme; return chicken to skillet along with drained pasta. Toss gently to combine.
  6. Serve hot, garnished with fresh parsley.
