  • 4 strips Turkey Bacon
  • 1 small yellow onion
  • 2 celery stalks
  • 2 garlic cloves
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 2 cups diced Yukon Gold potatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • Salt and pepper to taste
  • 1 1/2 cups cooked shredded chicken
  • 1 1/2 cups corn (fresh, frozen, or canned)
  • 1 cup half & half
  • 1/3 cup sour cream

Instructions

  1. Cook Turkey Bacon until crispy; set aside.
  2. Sauté onion, celery, and garlic in the rendered fat until softened.
  3. Stir in flour to create a roux.
  4. Gradually add chicken broth while stirring continuously.
  5. Add diced potatoes along with thyme and parsley; simmer until tender.
  6. Stir in shredded chicken and corn; cook for an additional 5–7 minutes.
  7. Reduce heat before adding half & half and sour cream; simmer gently.
