- Garlic powder
- Onion powder
- Dried thyme
- Dried rosemary
- Paprika
- Chili powder
- Yellow onion, thinly sliced
- 3 cups bite-size broccoli florets
- 1 zucchini, thinly sliced and cut into half-moons
- 1 small yellow bell pepper, cut into 1-inch chunks
- 1 small red bell pepper, cut into 1-inch chunks
- ¼ cup low sodium chicken broth
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Cut chicken into 1-inch pieces; season with salt and pepper.
- Combine garlic powder, onion powder, thyme, rosemary, paprika, and chili powder; sprinkle half over the chicken.
- Coat chicken with olive oil; heat remaining olive oil in a large skillet over medium-high heat.
- Cook chicken until browned (6-8 minutes); remove from skillet.
- Sauté onions in the same skillet for 2 minutes.
- Add broccoli, zucchini, yellow and red bell peppers; season with remaining spices; cook until crisp-tender (4-6 minutes).
