  • 1/2 cup canned pumpkin (blotted)

  • 1/2 cup granulated sugar for coating
  • 1/2 tsp pumpkin or chai spice blend for coating

Instructions

  1. Brown the butter over medium heat until golden brown, then cool for about 30 minutes.
  2. Blot canned pumpkin to remove excess moisture.
  3. In a bowl, whisk together flour, spice blend, baking soda, and salt.
  4. Combine cooled brown butter with brown sugar and maple syrup; stir in egg yolk and pumpkin until blended.
  5. Gradually mix in dry ingredients until just combined. Chill dough covered in the fridge for at least 8 hours.
  6. Preheat oven to 350°F (177°C). Prepare baking sheets lined with parchment paper.
  7. Roll chilled dough into balls, coat in spiced sugar mixture, and place on baking sheets.
